An American Bento

Have you seen those tradition Japanese Bentos?  They look exquisite, filled with all sorts of exotic goodies.  My girls get a little squeamish when I suggest the possibility of making one of those...but I think they'll enjoy this bento lunch.  It takes some of the food finds of a traditional bento box and mixes them with things that are a favorite of my kids.   And since this is one busy, work filled weekend for me I made some Bento lunches for Daddy-O to pull out of the fridge and serve. 
I know the girls will love them, but I'm willing to bet he makes himself something different!
This lunch has some salmon, jasmin rice, cucumber salad, carrot sticks, cashews, some mandarin oranges, and some crenshaw melon.  This is local salmon (we live in the Pacific NW, and man is our salmon yummy!) and the cucumber salad is similar to what you'd find in a sushi restaurant.   As always I used our easylunchboxes...not only can I pack a ton, but they stack in the fridge so nicely!

    I found a sea shell and gave it to my 4 year old daughter and said "You can hear the ocean if you put this to your ear." She put the shell
    to her ear and screamed. There was a hermit crab
    inside and it pinched her ear. She never wants to go back!
